6 oz Butter
300 g Granulated Sugar
3 pk Chocolate (Baker’s, 66% 4 oz. each)
6 Egg
3 g Coffee, Instant (instant)
3 tbsp Hot Water
1 tsp Vanilla Extract
Pan Spray (Heavy coating of sides and bottom)
Prep Method
HEAT oven to 350ºF.
Melt butter, granulated sugar and chocolate in large bowl until butter and chocolate are completely melted and mixture is well blended, Cool slightly.
WHISK eggs in small bowl until blended; gradually stir into chocolate mixture.
Stir together coffee , hot water and vanilla. Add to chocolate mixture
POUR into 9-inch springform pan sprayed with cooking spray. Place on sheetpan with parchment (catches any pan leaking during baking)
BAKE 40 to 50 min. or until toothpick inserted in center comes out with moist crumbs. Run knife around rim of pan to loosen cake; cool for 50 minutes before removing rim.
Cut into 12 slices
4 cups blueberries
1 cup chopped shallots
1/2 cup honey
1/4 cup brown sugar
2 TBLS Sherry vinegar
2 limes zested and juiced
Red pepper
Thyme
Salt
Pepper
Add all ingredients to a pan and bake at 450 for 20 min or more (until the blueberries burst)
